I have always had a huge sweet tooth! I have been known to crave dessert in the evenings and feel that a good meal is not complete without a dessert. But, does it have to be unhealthy!? Of course not. Don’t Mess with Mama, released a recipe on her blog for homemade Paleo Reese Cups (Check out her blog!). They looked amazing! I have tweaked the recipe a bit to our liking and it is delicious! They practically melt in your mouth! Okay, enough talking…I’m sure you want the recipe!
Paleo Reese Cups

A delicious and healthy alternative to the store bought reese cups!

Ingredients
- 1/2 cup Cashew Butter
- 1/4 cup Extra Virgin Coconut Oil
- 1/4 cup raw honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- 2 cups Enjoy Life Chocolate Chips (or comparable brand)
Instructions
- 1. Combine all ingredients except the chocolate chips in a medium-sized bowl and stir until well mixed. You can use an electric mixer. I mix by hand.
- 2. Melt the chocolate chips in a double boiler (you can do it in a microwave but I don’t have one) until it turns into a thick liquid.
- 3. Use a muffin pan and line with silicon cupcake liners.
- 4. Fill each cupcake liner with about a tablespoon of melted chocolate (it should fill about 1/4 of the liner). Then brush up the chocolate up the sides a bit so it’s at about 1/3 up the liner.
- 5. Fill the middle with about 1 1/2 tablespoons of the cashew butter mixture.
- Top the butter mixture with another tablespoon of the melted chocolate. Use remaining melted chocolate to top off all cupcake liners.
- Store in the refrigerator for about an hour to let it harden.
- 6. When ready to serve, take out of the fridge and remove the cupcake liner. They look just like store bought with the fancy ridges!
- Keep in the fridge or freezer!
