Homemade Scalloped Potatoes

Ingredients
- 8 oz cheddar cheese, shredded
- 1/4 cup butter
- 1/4 cup whole wheat flour
- 2 cups milk
- 1 teaspoon salt
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 5 medium potatoes, thinly sliced
- 1/2 medium onion, diced
Instructions
- 1. Melt butter over low heat in medium saucepan.
- 2. Blend in flour, then add milk, all at once.
- 3. Cook, stirring constantly until slightly thickened.
- 4. Add all but small handful of cheese, season with salt and pepper and continue to cook until cheese melts.
- 5. Remove from heat
- 6. Layer cheese sauce and potatoes/onions beginning and ending with cheese sauce. Sprinkle the small handful of reserved cheese on top.
- 7. Bake at 350 degrees Fahrenheit for about 1 hour or until cheese is bubbly and potatoes are soft.
