My husband and I love quesadillas from Taco Bell, but the meat there isn’t so healthy. We have been told that their meat is a step above dog food! Yuck! So…I decided to make them here at home with our farm fresh, grass fed chicken. One way for us to bring healthy fast food to our home! Yeah, you heard me right, healthy!….or healthier!
Knock-off Taco Bell Chicken Quesadillas

Have a Chicken Quesadilla that tastes identical to ones at Taco Bell!

Ingredients
- 3 Chicken Breasts
- 12 flour tortillas
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded Cheddar cheese
- salt and pepper, to taste
- olive oil
For the sauce
- 1/4 cup Olive Oil Mayonnaise
- 2 tsp jalapeno, minced (as finely as possible)
- 3/4 tsp sugar
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/8 tsp garlic powder
- 1/8 tsp cayenne pepper
- pinch of salt
Instructions
- 1. In a small bowl, mix together ingredients for the sauce. Set aside so the flavors can marry together.
- 2. Meanwhile, heat a medium skillet over medium heat. Season the chicken breasts with salt and pepper. Add to skillet and cook for about 4 minutes each side. Remove from skillet and set aside. Let cool for 5 minutes before cutting.
- 3. Cut chicken into bite size or smaller pieces. Make sure to have cheese and other ingredients for building quesadillas at your fingertips. Now it is time to assemble the quesadillas!
- 4. Heat a large skillet over medium heat. Add 1 tsp oil to skillet. Place one tortilla in skillet. Sprinkle some of the cheeses and chicken on top. Take a second tortilla and spread 1 Tablespoon of sauce on one side. Place it face down on chicken and cheese of the first tortilla. After 1-2 mins of cooking tortilla it should be golden brown. Flip quesadilla and let the other tortilla cook for about 1 minute or until golden brown.
- 5. Remove quesadilla from heat and side aside. With a pizza cutter, cut the quesadilla in half horizontally. Then cut each half into three even triangular pieces. Repeat this with the other tortillas to assemble the remaining quesadillas.
- 6. After cooking and cutting the quesadillas, you are ready to plate them. Serve with your favorite salsa and some sour cream. =)
